Because the tea variety from which this black tea comes is different from that from which most black teas in the world come, Japanese tea has a taste quite different from the black teas commonly drunk in the West. WHAT IS WAKOUCHA BLACK TEA?
While Japan is known for its green teas, Japanese black teas represent a tiny portion of the nation's tea production (1%). However, there is growing enthusiasm for black tea in Japan, with the development of atypical varieties. "Wakoucha" means "red tea," a name that comes from the red hue of this tea when brewed. Wakoucha, a sweet and refreshing tea with a woody and fruity body, is a perfect alternative to your classic black tea.
This Japanese black tea comes from the second harvest of the tea plants, in June. It is a mechanical harvest. The first step in its production is to wither the tea. For our wakoucha, the tea leaves are left to wither for 16 to 17 hours. The tea leaves are then rolled and oxidized (to make black tea, the leaves must be oxidized). They are then rolled for several hours at room temperature using a rolling machine that presses the leaves against the walls of a barrel to change their color. The leaves are then dried and placed in the refrigerator for at least six months. The final step is shaping the tea leaves. They are then dried once more until packaging.

PACKAGING AND STORAGE
Box capacity: 60 grams, or about 35 bowls or cups (for 200 mL, use one teaspoon of black tea, or 1.5 to 2 g). You can also prepare 40 to 45 small cups (Japanese style), using a 250 mL teapot of water (Japanese style) in which you will infuse 3 g of wakoucha.
Storage: Keep your jar tightly closed in a cool, dry place (e.g., in a cupboard away from sunlight). This way, its taste and benefits will be optimal for 6 months after opening.
Dosage: Allow 1.5 to 2 g of wakoucha for one cup (Western style).
